Sheet Pan Lemon Garlic Salmon with Roasted Veggies

Servings: 4
Ingredients:
● 4 salmon fillets
● 2 tbsp Villacados lemon avocado oil
● Juice of 1 lemon
● 3 garlic cloves, minced
● 1 tsp dried oregano
● 1 tsp sea salt, 1⁄2 tsp black pepper
● 1 zucchini, sliced
● 1 red bell pepper, sliced
● 1 cup cherry tomatoes
Instructions:
1. Preheat oven to 400°F (200°C).
2. Mix avocado oil, lemon juice, garlic, oregano, salt, and pepper.
3. Place salmon on a parchment-lined sheet, brush with mixture.
4. Toss veggies with a drizzle of avocado oil + seasoning, spread around salmon.
5. Roast 15–18 minutes until salmon flakes easily.
