Chipotle Chicken Guacamole Bowls

Ingredients
For the chicken:
● 4 chicken thighs, sliced thin
● 2 tbsp Villacados Chipotle avocado oil
● 1 tsp chipotle chili powder
● 1 tsp smoked paprika
● 1 tsp garlic powder
● 1⁄2 tsp cumin
● Salt + pepper to taste
For the bowls:
● 2 cups cooked rice (brown or white)
● 1 can of corn
● Freshly made guacamole
For the chipotle sauce:
● 2 tbsp mayo
● 3 tbsp sour cream
● 1 tsp hot sauce (adjust to spice preference)
● 1⁄2 tsp paprika
● 1⁄2 tsp garlic powder
● Juice of 1⁄2 lime
Instructions
1. In a skillet, heat avocado oil over medium-high. Season chicken with chipotle chili,
paprika, garlic, cumin, salt, and pepper. Cook 6–8 minutes, flipping once, until golden
and cooked through.
2. Mix all sauce ingredients in a small bowl until creamy.
3. Assemble bowls: rice base → top with chicken, corn, guacamole.
4. Drizzle with chipotle sauce before serving.
