Breakfast Veggie Omelet

Servings: 2

Ingredients:

● 4 eggs

● 1 tbsp Villacados avocado oil

● 1⁄2 cup spinach

● 1⁄4 cup diced tomatoes

● 1⁄4 cup bell peppers, diced

● 2 tbsp feta cheese (optional)

● Salt + pepper to taste


Instructions:

1. Heat avocado oil in a nonstick skillet over medium heat.

2. Add bell peppers and spinach, sauté until softened.

3. Whisk eggs, season with salt + pepper, and pour into skillet.

4. Add tomatoes and cook until eggs are set. Sprinkle with feta and fold over.

5. Serve warm with whole-grain toast.
